Edible protein production with alternative sources of raw materials: a review

Abstract

This work aims to analyze the international factors that demonstrate the need for massive and eficient utilization of biomass to combat the current challenges of food security. Special emphasis is devoted to analyzing the potential of protein production using edible fungi grown in a substrate of agro-industrial waste. The need to develop technologies based on solid fermentation which permits these productions to be more competitive is discussed in this article.
