Abstract

Sunflower (Helianthus annus) is a plant that is cultivated in various countries around the world in order to obtain high quality edible oil for its content of linoleic, oleic, palmitic, stearic and other unsaturated fatty acids. In one of the works carried out by Dr. David Lentz of the University of Cincinnati, it is pointed out that it is a millenary crop of Mexico, whose domestication dates from pre-Columbian times; Traces of fossilized seeds show that it was cultivated around 4000 years ago.
